Of course, if the dogwood grows on the site, you will be sure to harvest it for the winter. In different forms and variations of the preparation, dogwood is very useful for pregnant women, nursing mothers, children, the elderly and people with an active lifestyle. Dogwood will also be beneficial for the prevention and treatment of many diseases. In this case, however, it should be remembered that products from dogwood berries are contraindicated with a tendency to constipation, peptic ulcer of the stomach and duodenum, increased acidity of gastric juice, high blood pressure. It is undesirable to eat berries or products from them before bedtime for children with an easily excited nervous system.
Dogwood berries can be consumed not only fresh. Culinary processing of fruits preserves the taste, healing, beneficial qualities of berries for a long time. I offer several recipes for processing cornel berries.
Dogwood Jelly
Wash the fruits (1 kg), put in an enamel pan, pour 2-3 cm higher than the fruit, cover, cook for 30-40 minutes until soft, avoiding boiling. The resulting broth (1 liter) is drained, mixed with sugar (800 g). Wipe the berries through a coarse sieve. Then pour the mashed berry puree with the obtained sugar syrup. Cook again, constantly removing foam. Jelly is ready if the drop on the saucer freezes without spreading. Pour boiling jelly into hot sterile jars and seal.
Dogwood, mashed with sugar
The most useful product is cornel, mashed with sugar, since this method allows you to save all the vitamins and aroma of fresh fruits. Only very ripe soft fruits are suitable for this processing method. They need to be washed, dried, removed the bones (I cut the flesh with a knife). The process is time consuming, but the result is worth it. Rub the pulp through a sieve or chop with a blender. Add sugar to the resulting mass (2 kg per 1 kg of fruit), mix until completely dissolved. Arrange in clean jars, close with plastic lids, store in a cool place.
Dogwood Jam
For jam use solid red, dark red or yellow berries. They must be washed. Blanch in boiling water for 5-8 minutes, then pour cold. Syrup is prepared at the rate of 1.2-1.5 kg of sugar per 400 ml of water and 1 kg of cornel fruit. Pour the fruits with hot syrup, cook for 3-5 minutes, then set aside for 5-6 hours. Cook in two or three steps, constantly removing foam. The syrup is gradually boiled. The jam is ready if the cooled drop on the saucer does not spread. Pour jam into sterile jars, cork.
Pickled dogwood for the winter like olives
This is a preparation for the winter from Armenian cuisine. Pickled dogwood is a wonderful snack to any festive table. It looks just fine! No worse than olives and olives!
Recipe.
In clean jars (preferably half a liter) we put:
- Bay leaf;
- black pepper peas;
- washed and peeled berries.
Marinade:
- per liter of water 1h. a spoonful of sugar;
- 1 tbsp. a spoonful of salt;
- 1 tbsp. a spoon of vinegar.
Boil the marinade and pour into the jars with dogwood. To sustain 1-2 minutes. Drain the marinade into the pan. Boil again and pour over the jars again. Roll up metal covers. Turn upside down, wrap with a blanket and leave to cool completely! All is ready!!! Yummy !!!
Dogwood Frozen
Here he is - a frozen dogwood! In hoarfrost, cooling hands, almost glassy, but so tasteful !!! Awesome berry, tastes sour-sweet with a slightly astringent property. By its useful properties it is equal to blackcurrant, lemon and wild rose. Frozen storage allows you to save most of vitamin C, all trace elements and a pleasant tart taste. Attention!!! After freezing, the berries become even tastier and sweeter.
Dried dogwood
Fresh berries are sour. And dried dogwood, if laid, becomes softer, more pleasant and sweeter. Maybe there is no need for jam and stewed dogwood if it tastes better dried or dried? Moreover, in winter, our body most of all needs vitamins and minerals to maintain health and energy.
Dried dogwood has tonic and antiviral properties. Its positive effect on the human body is undeniable. Sun-dried or dried berries improve appetite and digestion; help get rid of heartburn; remove heavy toxins; strengthen immunity; help in the fight against body fat and overweight with regular use. Women will definitely appreciate the fat burning properties of berries. For weight loss, dogwood is best consumed raw or dried. In this case, the gastrointestinal tract begins to work better, metabolism (including lipid metabolism) improves, and unnecessary waste is removed.
